These edamame poppers are the best little nuggets to eat when you’re craving fried bar snacks! Since they AREN’T fried, and are packed with protein, you won’t regret them as a late night snack!!
They’re best right out of the warm oven and dipped in a ranch sauce (chipotle ranch is amazing) or wasabi sauce.
You can also use this recipe on almost any other veggie: green beans, okra, etc.!
What you’ll need:
-1.5 cups frozen edamame, shelled
-2 eggs
-3/4 cup flour
-1/2 tsp salt + a pinch cayenne pepper
-1 cup Panko breadcrumbs
-1/2 cup grated Parmesan cheese
What to do:
- Cook edamame according to package. I find the easiest way is to put it in a 2 cup measuring dish, cover with water, and microwave 5 minutes.
